Vegan Swedish Meatballs with Cranberry Sauce

A fan favorite no matter what time of year - Ikea proves this! If you’re vegan this is the perfect recipe for you.

 

 

Servings: 3-4

Prep Time: 10-15 minutes

Cook Time: 20-25 minutes

 

What you need:

1 box Shroomeats Mushroom Balls
2 tsp olive oil
1 tbsp preferred butter
1 tbsp all-purpose flour
½ tsp allspice
1 cup vegetable broth
¾ cup plant-based cream
A squeeze of lemon juice
A dash of vegan Worcestershire sauce
Salt and ground black pepper, to taste
A small handful of fresh parsley, chopped for garnish
¼ cup cranberry sauce for garnish

Let’s get started:

  1. Brown the Mushroom Balls
    • Heat 2 tsp olive oil in a frying pan over medium-high.
    • Add Mushroom Balls, season with salt and pepper to taste, and saute for 5-7 minutes or until browned. Remove and set aside.
  2. Make the Gravy
    • Using the same pan reduce the heat to medium and melt butter.
    • Sprinkle in flour and allspice, whisking until combined and fragrant, about 1–2 minutes.
    • While gradually adding the vegetable broth and cream, whisk continuously until smooth and clumps are gone.
  3. Simmer Together
    • Reduce the heat to low and add the Mushroom Balls, squeeze of lemon juice, Worcestershire sauce, and salt and pepper to taste. Cover and simmer for 10–12 minutes, allowing the flavors to meld (*Pro tip, you can simmer for up to 2 hours).
  4. Plate and Garnish
    • When you’re ready to serve, plate your vegan Swedish meatballs with gravy and garnish with fresh parsley and a few dollops of cranberry sauce. Happy Holidays!
