Holiday Mashed Potato Board with Mushroom Balls

What you need:

 

 

Shroomeats Mushroom Balls
1 box Shroomeats Mushroom Balls
1-2 tbsp Italian seasoning
1 tbsp olive oil
2 tsp salt
1 tsp ground black pepper

Mashed Potatoes
2–3 medium potatoes, peeled and cubed
2 tsp salt
2 tsp ground black pepper
1 tbsp preferred butter
⅓ cup preferred milk

Gravy
1½ cups preferred milk
2 tsp marmite 

Toppings
1½ cups fresh broccoli florets
½ cup cranberry sauce (we used store-bought)

 

Let’s get started:

  1. Make the Mashed Potatoes
  • Bring a large pot of water to a rapid boil and add the potatoes. Boil for 10-15 minutes, or until fork tender. While the potatoes are cooking, move on to making the gravy.
  • When the potatoes are done, drain the water, mash thoroughly, add butter and milk, and mix until smooth. Season with salt and pepper to taste.
  1. Make the Gravy
  • In a saucepan on low heat, warm the milk stirring in marmite until well-combined. Adjust seasoning to taste and reduce on a low simmer to thicken, stirring occasionally. 
  1. Heat the Shroomeats Balls
  • In a pan on medium heat, add olive oil, Mushroom Balls, Italian seasoning, salt, and pepper. Heat for 5-7 minutes, or until browned. Remove and set aside.
  1. Cook the Broccoli
  • In the same pan, add the broccoli florets and sauté for 3 - 4 minutes, or until tender. Set aside.
  1. Assemble the Board
  • Spread the mashed potatoes evenly across a serving board as the base layer.
  • Arrange Mushroom Balls and broccoli on top. 
  • Drizzle with gravy and dollops of cranberry sauce.
