Glass Noodle Salad with Mushroom Shred-it

Ingredients:
1 Box Shroomeats Mushroom Shred-It
200 g glass noodles (1 package)
2-3 shallots sliced
1-2 carrots sliced
2 garlic cloves chopped
3-4 Thai chilies chopped
3 tbsp soy sauce
3 tbsp vegetable stock
2 tsp coconut sugar
Garnish:
1-2 limes cut into wedges
¼ cup cilantro chopped
Instructions:
- Cook the noodles per the package instructions. When finished, set cooked noodles to the side.
- In a mixing bowl, add Mushroom Shred-It, sliced shallots, sliced carrots, chopped garlic, chopped chilies, soy sauce, coconut sugar, and vegetable stock. Mix well. *Mushroom Shred-It does not need to be heated.
- Add the noodles to the mixing bowl and gently toss ingredients together to not break the noodles.
- Plate and garnish with cilantro and lime wedges.
